We live in a world inundated with plain ceviches. When you happen to come upon a great example of this coastal dish, you are obligated to announce it. Ceviche de La Patrona is one of those great ceviches that you love to recommend and that surprises you with its flavor, freshness and texture.
The pandemic has obligated us to change our lives radically. Fortunately, for some it has also allowed an opportunity to explore new projects. La Patrona came to be as a family ghost kitchen during the Covid-19 quarantine. Later, owner and professional musician Damián Maldonado decided to take advantage of his culinary talents and direct them into his ceviches, aguachiles y tartares.
Damián Maldonado and his family are fascinated with raw seafood. “We really enjoy the artisanal process of preparing each ceviche, dedicating much attention and inspiration to it. Cooking is an art that we respect and practice. We love to create experiences with the flavors of our dishes. We make the food that we want to eat.”
What to try?
All of their fish is fresh and brought directly from Sinaloa. They grow the herbs that they use in the dishes in their family garden. Popular items on their menu include Peruvian Ceviche, Ceviche of the House (La Patrona), Tuna Aguachile, Shrimp Aguachile, Salmon and Tuna Tartar. They are all served by the liter and are delivered in eco-friendly packaging. Their concept is that each abundant serving offers great flavor that will satisfy several people. Something we also love about their service is that the prices are very fair and accessible.
Ceviche de la casa (La Patrona) is a traditional dish with a mexican interpretation. Its base is chopped tilapia, marinated with lime, vinegar and other spices. Part of the uniqueness of this dish is the addition of dill that gives it a special touch of flavor, as well as pickled güero chiles that give it consistency and a light spiciness. Tilapia is a perfect fish for ceviche because it doesn’t lose its texture and consistency with time. On the contrary, its flavor is concentrated as it sits in it’s juices.
Another of their hit products is Shrimp Aguachile. Apart from its pleasant spiciness and the flavor of the fresh shrimp, it is accompanied by a ton of avocado that gives it a creamy texture. The Peruvian Ceviche is inspired by a traditional and home-style restaurant in Los Angeles, where Damian fell in love with this style for its many contrasting flavors.
All of their dishes are delivered with a delicious hot house-made salsa that has habaneros, mango and special spices.
